Morning! Today I decided to hop out of bed and finally post this long-overdue recipe on the blog. It took a little thinking on my part as I decided to stray from the original recipe I had in mind when I bought these cute little mason jars the other week. My recipe was inspired on a chance encounter with a rather delicious (and addictive!) oat cookie with chocolate nibs, but can definitely be tweaked to suit a healthier diet – particularly if you’re vegan.
1 hand-size Oat Biscuit with Chocolate Nibs | Plain Yogurt (fat free, low fat, double cream – whichever!) | Half a cup of Raw Granola | Half a Banana (sliced) | 2 tbs Chia Seeds
The key to assembling this multi-layered breakfast is to start with something dry and crunchy, as this will absorb all the liquids and flavors that pour down to the base of the jar. I crumbled the oat biscuit and layered it as the base. Next, add two tablespoons of your yogurt and layer that on top of your biscuit base. Once that’s done, pour in 2-3 tablespoons of raw granola (I did three spoons). Finally, add 2 more tablespoons of yogurt, top on a few slices of banana and sprinkle over a teaspoon of chia seeds (just to make absolutely sure its healthy, right?)
