COULD WEEKENDS GET ANY BETTER?
Whether you’re a morning person, or prefer to rise at noon, weekends were made for guilty pleasures. If you’re wondering what to make for brunch this weekend, why not spoil yourself and give this oh-so-easy and absolutely delicious recipe a go. I’ve listed all the ingredients you’ll need to make the perfect flapjacks, including my homemade blackberry-preserve to top it off.
Flapjack pre-mix, 2 large eggs, 2tbls cooking oil, and 2 cups of almond milk
Blueberry-Preserve for Topping:
1/2 cup of Blackberries and 1 tsp sugar
In a large mixing bowl, prepare your flapjack batter according to packet instructions, then pour over in to a squeeze bottle for easy use. Allow the batter to sit for 30 minutes, or overnight. Once your batter is ready to use, heat up your frying pan and squeeze 40-50ml of batter in to the pan, when the batter begins to slightly bubble, it’s ready to be turned. Fry on both sides until golden brown. Once you’ve plated your flapjacks (I usually make 5-6 little flapjacks and stack them) you can start making the blackberry-preserve. Take a microwaveable bowl and place you berries inside with an added teaspoon of sugar. Place bowl in to the microwave on high for 20-30 seconds. If you see a small amount of dark purple juice gathered in the bowl among the berries, then the preserve is ready. Use a spoon to gently mix through the berries and sauce, then pour over flapjacks. Finish with a generous sprinkle of coconut flakes.
